Common requirements for operating your licence.
Annual licence fees
A licence fee is payable yearly and invoices are posted to the licensee towards the end of November. They are due on 1 January every year. Please ensure you pay on time as penalties apply for late/non-payment.
You do not receive a new licence document on payment of the fee.
Approved managers and staff training
Approved managers
An approved manager is always required to be on the premises when open for trade. The only exception is where the licensee is an individual (not a company or partnership) and is supervising the business. If the licensee entity is a partnership or company, then you need an approved manager.

Staff training
All staff involved in the sale and supply of liquor must be appropriately trained in the Responsible Service of Alcohol within 28 days of their commencement.

Training register
A register must be maintained by the licensee to prove staff have completed Responsible Service of Alcohol training. This register must be available on the licensed premises.

Incident registers
All licences are required to maintain an incident register. An example of the types of incidents that must be added to the register can be found in the 'Incident register at licensed premises policy'. This includes an incident report form and crowd controller notice of authorisation form. This register must be available on the licensed premises.

Bring your own (BYO)
In accordance with section 110(6) of the Act a licensee can still allow BYO at their premises once they have a licence. Allowing this and deciding if a corkage fee will be charged is at the licensee’s discretion. The licensee is still required to ensure that liquor is not served to a person that is deemed drunk or to a juvenile.
Unconsumed wine bought ancillary to a meal
Section 110(6A) of the Act specifies that where wine is sold to a person for consumption ancillary to a meal on a licensed premises, the purchaser is permitted to take an unconsumed portion of the wine from the licensed premises. This provision primarily applies to premises not permitted to sell packaged liquor such as restaurants, small bars and tavern restricted licences.
